The panna cotta is a typical dessert of the Italian region of Piedmont. It is similar to a custard but with a softer and more compact texture thanks to the gelatin that it has.

Preparation
Heat half of the cream and add the vanilla beans split lengthwise and scrape the inside.
Add 70 grams of sugar and when the boil starts, put out the heat and leave to infuse for 15 minutes.
Mix the gelatin powder with the rest of the cream and heat in a water bath until it is completely diluted.
Join the two creams, previously cast the first and pour into a mold.
Cover with clear film and refrigerate at least 4 hours.
Grind the strawberries together with half of the raspberries, strain and add the rest of the sugar.
Unmold the panna cotta and serve accompanied by the coulis with strawberries or raspberries.
