Ingredients

10 portions
  • 1 3/4 cups flour
  • 2 teaspoons baking soda
  • 1/4 teaspoons salt
  • 1/2 cups unsalted butter
  • 3/4 cups brown sugar
  • 2 eggs
  • 1/2 cups Apple sauce
  • 2 teaspoons vanilla extract
  • 2 cups pear, in cubes
  • 1 cup bitter chocolate chip
  • 1/4 cups almond, filleted
  • 2 pears, whole

Preparation

Preheat the oven to 180ºC.
Butter a pancake mold. Cover the bottom with waxed paper.
Mix flour, baking powder and salt. Reserve.
With an electric mixer , beat the butter and brown sugar until soft and fluffy, about 3 minutes. Add the eggs one by one, then add the vanilla extract and the applesauce. In low speed, add the flour mixture little by little and continue beating.
Add the chopped pear mixed with a spatula wrap. Empty the mixture into the previously prepared mold, insert the two whole pears in the mixture, sprinkle the almonds and bake for about 1 hour or until a toothpick comes out clean.
Melt the chocolate sparks in a bain-marie and reserve.
Remove the pancake from the oven and let it cool for 10 minutes. Unmold and remove the waxed paper. Serve the side where you see the tip of the pears, finally add the melted chocolate on top.
