This dessert is prepared with a base of meringue, fresh mangoes and whipped cream. It is a very rich combination because it has the perfect and firm texture of the meringue. Complemented with the sweet mango that no one can resist.

Ingredients

8 portions
  • 1 cup powdered sugar, or superfine sugar
  • 1/2 cups brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 2 teaspoons white vinegar
  • 5 egg whites
  • 6 mangos, peeled and cut into strips
  • 2 teaspoons sugar
  • 1 cup whipping cream
  • 1/3 cups sour cream, sour cream
  • to taste powdered sugar

Preparation

Preheat the oven to 135º C. Cover 2 round bowls of baking cake with butter and lightly dust the icing sugar. Cut sheets of wax paper the size of the containers and put on the container by sticking them to the mant
Mix sugar and brown sugar (if you have a better food processor).
Add vanilla and vinegar in a bowl.
Beat the egg whites with a pinch of salt (if you use an electric mixer on a medium level) until soft and concise peaks are created. Start adding 1 tablespoon of the sugar mixture at a time until you have poured the entire mixture.
Add the vinegar mixture and put the blender on a high level until the meringue is thick. Pour the meringue into the baking dishes and with a spoon flatten the top so that it is smooth.
Bake the meringue until it is dry to the touch, about an hour (the bottom will continue with a consistency of meringue).
When removing the meringues remove from the containers with a knife very carefully and remove the waxed paper. They are easy to break so you have to be very careful when doing that.
To prepare the dessert, put a meringue, put on the meringue a layer of the whipped cream mixture, a layer of mango, another glass of cream, another layer of fruit and at the end the other meringue.
Garnish with a bit of cream and mango slices

PRESENTATION

Decorate the pavlova with the mango in slices.

TIPS

Preferably use manila mango in season.
