Easy and delicious peanut butter cookies with jam in the center, very quick to prepare! They are ideal for a diet low in carbohydrates since they only have 7 grams of carbohydrates.

Ingredients

12 portions
  • 3/4 cups Sugar substitute, Splenda for cooking
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup peanut butter
  • 1 teaspoon baking soda
  • 1/4 cups No sugar added red fruit jam

Preparation

Preheat the oven to 350 F. (180 C)
Mix the sugar, egg, and vanilla extract with a blender at low speed for 3 minutes.
Add peanut butter and baking soda. Mix in medium speed until a paste forms, beating about 30 seconds.
Form 24 balls (2 teaspoons each) of the dough and place on a greased baking sheet. Separate them as 2cm each. With your thumb, press the balls of dough to form a hole. Fill the hole with 1/2 teaspoon of jam.
Bake until golden brown, about 12-14 minutes. Go to a rack and let cool before eating.

Son muy ricas!!! Pero deben hacerlo con Splenda, ya que, yo solo tenía stevia y el sabor es más fuerte... pero quedan deliciosas perfectas para una dieta baja en carbohidratos!!!
