Preparation
Preheat the oven to 180 degrees Celsius and place the grid in the center. Grease a mold for 12 muffins with vegetable spray and place muffin pieces.
In a deep bowl mix flour, baking powder and salt.
In another deep bowl mix the sugar, butter, milk, cream, eggs and yolk. Beat well with a balloon whisk.
Combine the liquid ingredients with the dry ingredients and mix with a wooden spoon.
Add the pear and ginger to the mixture and combine. (The dough should be left with lumps, do not over mix).
Spoon the dough into the muffin pan with a spoon. Bake the muffins until lightly browned (30-35 minutes). Remove from the oven.
While the muffins are baking, they have their glaze mixed in a deep bowl with the powdered sugar and ginger. Add 6 tablespoons of water and mix well until glazed.
Once the muffins have cooled, cover them with the glaze and wait at least 30 minutes before serving them so that the glaze becomes hard.
