Preheat the oven to 120°C For the ganache, melt the chocolate with the heavy cream in a small saucepan. Let it cool in the refrigerator for one hour. Whip the egg whites until stiff peaks form and gradually add the sugar. Then, add the powdered sugar and cocoa until smooth and shiny. Form the meringues by placing a tablespoon of the mixture on a baking sheet lined with wax paper, spaced 4 cm apart. Bake for one hour. Once the meringues are cool, spread the ganache on half of the meringues (approximately 10) and top with the remaining meringues to make sandwiches.
