This atole recipe is a different option to include amaranth in your diet, since it is a little used cereal, but considered as a superfood, because it is rich in protein, iron, potassium, it is highly digestive and has a good amount of fiber ; In addition, it is mixed with banana, which also provides vitamins and minerals. Ingredients

2 portions
  • 2 tablespoons butter
  • 1 cup banana, sliced
  • 1 cup amaranth
  • 1 cup piloncillo, grated
  • 1 liter milk
  • 1 raja cinnamon
  • enough amaranth, to decorate

Preparation

Heat the butter and the banana in a pot over medium heat; add amaranth and brown sugar, and caramelize for 5 minutes. Add the milk and cinnamon, and boil for 5 minutes.
Grind the amaranth and the banana in the blender with the milk and return to the pot. Cook until thick, for 10 minutes. Check the taste. Serve, decorate and enjoy.

PRESENTATION

Decorate the atole with amaranth and accompany it with some bread or cookies, or a rich breakfast.

TIPS

Take good care of the caramelization of the piloncillo, since if you go over it, it can bitter the atole. It should be an intense golden color.
