Preparation
In a pan over medium heat, mix the sugar with 2 cups of water and the strips of yellow lemon (lime) peel.
Let it boil, stirring to dissolve the sugar for 1 minute.
Remove from heat and add 4 mint sprigs, let stand 30 minutes to mix the flavors.
After 30 minutes, remove the mint sprigs.
Pass the syrup through a Chinese sieve and put in a small jar.
Add the lemon juice and refrigerate until it is cold.
Just before serving, divide the syrup between 2 large jars.
Add the cold mineral water and stir well.
Add the ice.
Serve in glasses decorated with a slice of lemon and a leaf of mint.
