Ingredients

8 portions
  • 3 cups flour, for the dough
  • 1/2 teaspoons salt, for the dough
  • 1 teaspoon Rexal® baking powder, for the dough
  • 1 teaspoon sugar, for the dough
  • 100 grams butter, cold, for the dough
  • 2/3 cups mineral water, for the dough
  • 1 tablespoon vegetal oil
  • 1/2 cups onion, filleted
  • 1 tablespoon garlic, finely chopped
  • 2 cups poblano rajas
  • 1 cup corn grain, yellow
  • 2 cups asadero cheese, cut into cubes
  • enough vegetal oil, to fry
  • enough sour cream, at your to serve with
  • enough green sauce, or red, to serve

Preparation

For the dough, in a blender, mix the flour with the salt, the REXAL® baking powder, the sugar, the butter and the mineral water. Beat until you have a homogeneous mass, wrap with adhesive plastic and refrigerate for 20 minutes.
For the filling, in a pan over medium heat, heat the oil, sauté the onion, garlic, add the slices of poblano chili, the yellow corn kernels, season with salt and pepper, and cook for 5 minutes. Remove and let cool.
On a floured surface, spread the dough to a thickness of 3 mm and then cut circles of 10 cm in diameter.
Fill the empanadas with the rajas and the cubes of queso asadero, and with your fingers close like empanadas, pressing the edges so that they don't open.
Fry over medium heat in a pot with hot oil for 5 minutes or until golden brown. Drain on absorbent paper and serve with cream and sauce.

PRESENTATION

Serve empanadas with cream and the sauce of your choice.

TIPS

It is important that your filling is cold so that the dough for the empanadas can be handled correctly.
