  • 3 cups of flour for the dough
  • 1/2 teaspoonful of Salt for the dough
  • 1 teaspoonful of Rexal® Baking Powder for the dough
  • 1 teaspoonful of sugar for the dough
  • 100 grams of Butter cold, for the dough
  • 2/3 of Cup of mineral water for the dough
  • 1 tablespoon of vegetable oil
  • 1/2 Cup of onion filleted
  • 1 tablespoon of garlic finely chopped
  • 2 cups of rajas poblanas
  • 1 Cup of whole kernel corn yellow
  • 2 cups of asadero cheese cut into cubes
  • enough of vegetable oil to fry
  • enough of sour cream at your to serve with
  • enough of green sauce or red, to serve

    Preparation

    For the dough, in a blender, mix the flour with the salt, the REXAL® baking powder, the sugar, the butter and the mineral water. Beat until you have a homogeneous mass, wrap with adhesive plastic and refrigerate for 20 minutes.
    For the filling, in a pan over medium heat, heat the oil, sauté the onion, garlic, add the slices of poblano chili, the yellow corn kernels, season with salt and pepper, and cook for 5 minutes. Remove and let cool.
    On a floured surface, spread the dough to a thickness of 3 mm and then cut circles of 10 cm in diameter.
    Fill the empanadas with the rajas and the cubes of queso asadero, and with your fingers close like empanadas, pressing the edges so that they don't open.
    Fry over medium heat in a pot with hot oil for 5 minutes or until golden brown. Drain on absorbent paper and serve with cream and sauce.
