Croquettes are always a good choice as a snack or lunch for the little ones. This time we made a version of potato, mixed with bacon and stuffed with Manchego cheese, cheddar and the spicy touch of jalapeño pepper. Fascinating!

Preparation
In a bowl, mash the cooked potatoes until a puree is obtained, add the Manchego cheese, the bacon, the salt and the pepper. Form balls of approximately 15 grams, filled with cheddar cheese and jalapeño pepper.
Bread the croquettes with beaten egg and bread crumbs.
Heat the oil in a deep pot and fry the balls until they are crispy, remove from the frying and remove the excess fat with absorbent paper.
Serve the croquettes with a little salad and chipotle dressing.
