In a bowl, beat the eggs and season with salt, pepper, and chives. Heat a non-stick skillet over medium heat, add a teaspoon of oil and a bit of beaten egg. Form an omelette and cook for about 5 minutes or until cooked on both sides. Repeat to make 4 omelettes. Using a rolling pin, flatten the slices of bread and spread a tablespoon of cream cheese on two slices, joining them by the edges. Repeat with all the bread. Place an omelette on the bread with cheese, add ham and Extra Special® mozzarella cheese. Trim the excess and carefully roll it up. Place the cloves in the sausages to simulate the snail's eyes and the carrots to simulate the antennas. Stick the egg rolls with a bit of cream cheese. Serve with chopped spinach to simulate the grass.
