Ingredients

4 portions
  • 1 slice Capistrano® pork cheese, cut into cubes
  • 8 Mexican sopes, of corn
  • 1 cup refried black beans
  • 1 onion, median filleted
  • 2 carrots, cut in julienne
  • enough oil
  • enough apple vinegar
  • enough oregano
  • enough salt
  • 1/2 cups Cotija cheese, grated

Preparation

In a little oil sauté the onion and carrot, add the vinegar, oregano and salt to taste, let cool and add the cubes of pork cheese.
Fry the noodles in hot oil, arrange the beans at the base and add the pork cheese mixture to the marinade, sprinkle the grated cheese and serve. Accompany with cream.

TIPS

With this same preparation in escabeche you can fill poblano cold chiles accompanied with tomato sauce.
