Make the traditional Basque Style Cod fish but easier and faster.Enjoy this typical Christmas recipe at Christmas Eve dinner. You can prepare it and accompany it with some tortillas or bread to make tacos or patties, they will be delicious. The best thing is that if you can't find almonds or olives you can get all your ingredients in the closest supermarket. For this recipe, we add baby potatoes, although if you prefer, you can add large potatoes cut into cubes. Have you thought about how easy it is to make this cod?

Ingredients

8 portions
  • 3 liters Water
  • 1 kilo Langa® crumbled cod
  • 1/4 cups olive oil
  • 5 cloves garlic, finely chopped
  • 1/4 cups onion, finely chopped
  • 3/4 cups dried tomato, finely chopped
  • 2 bell peppers, finely chopped
  • 1 1/2 cups potato cambray, cut in half and cooked
  • 2 cups tomato sauce
  • 1 cup green olive
  • 3/4 cups capers
  • 3/4 cups almond, roasted
  • 6 güeros chilis
  • enough parsley, finely chopped
  • enough salt
  • enough black pepper

Preparation

Soak the crumbled Langa® cod fish in a pot with cold water, let it rest for 2 to 3 days until it is desalted. Drain and reserve.
In a saucepan, heat the olive oil, add the garlic, onion and cook until lightly changed color, add the dehydrated tomato, peppers and potatoes, cook a few minutes.
Add the cod, add the sauce, the olives, the capers, the almonds, the güeros chiles, the parsley, season with salt and pepper and cook until the flavors are integrated.
Serve hot and accompany with bread.

PRESENTATION

On an extended plate, accompanied by slices of baguette.

TIPS

Use an olive oil of very good quality, as this will give all the flavor to the recipe. The thicker the piece of cod, it will take more time to desalt. If the cod remains very salty, another option is to soak it in milk and garlic, the milk will absorb all the salt and the garlic will give it flavor.
