Fried Shrimp with Chimichurri from Chile

Ingredients

4 portions
  • 1 cup oil
  • 1 cup fresh parsley, finely chopped
  • 5 leaves basil, finely chopped
  • 2 tablespoons oregano
  • 4 cloves garlic
  • 3 tablespoons white vinegar
  • 3 árbol chiles
  • 2 cups ground bread
  • 2 eggs
  • 3 cups jumbo shrimp, cleansed
  • 1 cup vegetable oil
  • salt and pepper

Preparation

For the chimichurri, heat the oil very low, add the parsley leaves, the basil, the oregano, the garlic, the white vinegar and the chili, let cook for 5 minutes. Let cool and reserve.
In a deep saucepan, heat oil over medium heat.
Beat the eggs with salt and pepper, add the shrimp and roll in the panko, fly the shrimp in egg and finish in panko.
Fry the shrimp for 3 minutes with the help of Servitoalla® Kleenex Calorie® to remove excess fat.
Serve with the chimichurri.

The shrimp will absorb less fat, if the oil is hot enough.
