Fried Shrimp with Chimichurri from Chile

4 portions
  • 1 cup oil
  • 1 cup fresh parsley, finely chopped
  • 5 leaves basil, finely chopped
  • 2 tablespoons oregano
  • 4 cloves garlic
  • 3 tablespoons white vinegar
  • 3 chile de árbol peppers
  • 2 cups panko bread crumbs
  • 2 eggs
  • 3 cups jumbo shrimp, cleansed
  • 1 cup vegetal oil
  • to taste salt and pepper


For the chimichurri, heat the oil very low, add the parsley leaves, the basil, the oregano, the garlic, the white vinegar and the chili, let cook for 5 minutes. Let cool and reserve.
In a deep saucepan, heat oil over medium heat.
Beat the eggs with salt and pepper, add the shrimp and roll in the panko, fly the shrimp in egg and finish in panko.

Serve with the chimichurri.
