Delicious langoustines with cream. The prawns are great for an elegant dinner where you want to impress all your guests.

Ingredients

4 portions
  • 1 kilo prawn , cool
  • 2 cloves garlic
  • 1 tablespoon Dijon mustard
  • 1 cup fish soup
  • 1 gram lemon juice
  • 1 gram brandy
  • 1 gram sherry
  • 5 tablespoons milk cream
  • 1 tablespoon parsley, finely chopped
  • 2 tablespoons soy sauce
  • to taste black pepper
  • to taste salt
  • 2 tablespoons olive oil
  • butter

Preparation

Peel and devein the prawns leaving the tail. Marinate for half an hour in the mixture of soy sauce, mustard, fish bottom, lemon juice, sherry, and pepper
In a wok with oil and butter fry the garlic, add the prawns and cook for 5 minutes until they change color.
Pass the prawns to a refractory mold and add the broth of the marinade, add the parsley, brandy, cream and salt to taste and finish in the oven preheated to 250 degrees for five minutes
To serve reserve the cooking broth and to thicken it with a teaspoon of cornstarch, serve hot.
As a garnish, it can be accompanied with fried yucca or potato croquettes and broccoli.
