  • 1/2 piece of red onion in thin slices
  • enough of sea salt
  • enough of black pepper
  • enough of olive oil
  • 1/2 Cup of olive oil for the vinaigrette
  • 1/2 Cup of balsamic vinegar for the vinaigrette
  • 2 spoonfuls of Dijon mustard for the vinaigrette
  • 1 clove of garlic finely chopped, for the vinaigrette
  • enough of sea salt for the vinaigrette
  • enough of black pepper for the vinaigrette

    Preparation

    In a small bowl and with a balloon whisk, mix all the ingredients of the vinaigrette until emulsified. Set aside
    Prepare your Weber grill for direct high heat (450º - 550ºF - 232º - 287ºC). Pour a little of the vinaigrette into the center of the lettuce and let it rest.
    Make a few incisions of approximately ½ cm in the beef, diagonally to the fibers of the meat. Varnish the cut with olive oil, season with salt and pepper to taste on both sides.
    Transfer the beef to your grill on direct high heat for 3 to 4 minutes per side for medium. Roast the lettuce halves on high heat directly for 1 minute with the side of the cut down, remove from the grill and reserve.
    Cut the meat into cubes of 1.5cm x 1.5cm and reserve. To serve, place 2 halves of lettuce and serve with meat, tomato, onion and vinaigrette to taste.
