Do you want to indulge your guests with a totally original grilled recipe? This recipe for Shrimp Chorizo Taco is the best choice of how to cook something easy, fast and delicious. Ingredients

8 servings
  • 16 pieces of fresh shrimp medium, clean
  • enough of sea salt
  • enough of black pepper
  • 2 spoonfuls of coriander leaf
  • 1/2 kilo of Corn tortillas
  • 1 teaspoonful of unsalted butter
  • 2 pieces of guajillo chili pepper clean and hydrated
  • 3 pieces of dry chile de árbol pepper clean and hydrated
  • 1 piece of chipotle peppers in adobo sauce
  • 1 clove of garlic
  • 1 Cup of Water
  • 1 tablespoon of Apple vinager
  • 1/2 piece of onion cut into squares
  • 80 grams of sausage

    Preparation

    Prepare your Weber® grill for direct high fire (450º - 550ºF - 232º - 287ºC). Blend the guajillo chile, the chile de árbol, the chipotle, the garlic, the water and the vinegar until you get a smooth paste. Strain and set aside.
    Preheat the WS GBS Weber® or a pan that can tolerate high temperatures inside the grill for 5 minutes. Add the butter and fry the onion, add the sausage and once it is golden brown add the shrimp, cook until they begin to change color (6 to 8 minutes, approximately).
    Add the chile paste to the pan and mix until incorporated. Season to taste with salt and pepper.
    Serve in tacos, accompanied by coriander leaves and your favorite sauce.

    Serve these tacos accompanied by creamy avocado sauce and coriander leaves to give that Mexican touch that we all love.

    TIPS

    You can use Weber Wok GBS inside your grill to make roasting easier. To keep the fresh coriander leaves, place them in ice water.
