One of the most typical and popular desserts in Mexican cuisine. Alegrías is a sweet made from amaranth, pumpkin seeds, walnuts, peanuts, raisins, piloncillo and honey. It is a perfect snack, product of its high protein content and its pleasant taste.

Preparation
Toast the nuts.
Mix the seeds, nuts, peanuts and raisins in a bowl.
Place the piloncillo in a pot. Add the honey. Cook the mixture without stopping to move. Once it boils for about 15 minutes, turn off and add the lemon juice. Stir Let cool for 10 minutes.
Melt the chocolate in a bain-marie. Once cold, add it to the mixture of amaranth and syrup.
Cover a mold with waxed paper. Add the mixture of nuts to the syrup. Incorporate this mixture into the mold. Firmly crush with a bean crusher until the thickness is 4 centimeters.
Let cool for 2 hours. If you want to give a better presentation, with the help of a cookie cutter, cut circles of joy.
