Preparation
In a deep bowl beat egg whites seasoned with salt and pepper with a balloon whisk.
In a small skillet (for 1 serving) or a large skillet (for the 4 servings) add a little olive oil and brown the spinach until well cooked.
Add the dehydrated tomato and cook until it begins to burp the egg, with a spatula turn and cook for 1 minute more.
Serve the omelets either in individual portions or if you used a large pan cut the large omelet in 4.
