Preparation
Cut the Eva® rustic lettuce hearts in half. Add olive oil and salt.
Heat a grill pan on high heat very well, and grate the hearts on both sides for about 5 to 7 minutes or until marked. Reservation.
For the filling, in a pan over medium heat heat the butter and cook the shallot a few minutes. Add the tomato, shrimp, habanero pepper and spices. Cook about 5 minutes or until the flavors are integrated. Season with salt and pepper. Reservation.
For the vinaigrette, in a bowl, combine the vinegar with orange juice, mustard, sugar, chili seeds, salt and pepper. Add the olive oil in the form of thread until completely emulsified. Reservation.
Serve hearts grilled with a little shrimp on top. Add the vinaigrette and decorate with guajillo chile rings and fried parsley.
