  • 2 1/2 cups ground beef, for the filling
  • 2 eggs, for the filling
  • 1 cup ground bread, for the filling
  • 1 tablespoon dried thyme, for the filling
  • 1 tablespoon oregano, for the filling
  • 1/4 cups parsley, for the filling
  • 1/4 cups pecan nut, chopped, for the filling
  • 1/4 cups cranberry , for the filling
  • to taste salt, for the filling
  • to taste black pepper, for the filling
  • 500 grams puff pastry

  • 2 packages Caperucita® sliced manchego cheese

In a large hot pan, fry the bacon for 5 minutes, it is not necessary to use oil as it will release enough fat. Once fried, remove the bacon from the pan and drain on absorbent paper or over a colander with a bowl underneath. Chill.
In the same fat as the bacon, sauté the onion until it turns bright. Add the carrot, celery, garlic and tomato and cook 3 more minutes, stirring constantly. Remove from heat, let cool and mix with the cold bacon.
In a large bowl, mix the ground beef with the cold vegetables and fried bacon. Add the egg, the breadcrumbs, the thyme, the oregano, the parsley, the pecan and the blueberries; season with salt and pepper and mix all the ingredients until you get a manageable consistency.
Preheat the oven to 200 ° C.
Roll out the puff pastry on a flat, floured surface until you get a wide rectangle 3mm thick. Place in the center of this rectangle sliced Caperucita® Manchego Cheese and on it, the meat mixture; shape cylindrical with your hands, flatten a little and cover with more sliced Manchego Cheese Caperucita®. Once the filling is in place, make four diagonal cuts in the corner of the dough, so that the puff pastry is tabs like an envelope. Close the roll starting with the shortest sides and then with the elongated ones; To achieve this you must varnish the puff pastry on the part that you will close; wrap into roll shape. Later turn the roll so that the smoothest part is up and place it on a previously greased tray. Refrigerate for 15 minutes.
To make the decoration, roll out a rectangle of puff pastry the length of the roll, wide enough to cover it and 3 mm thick. With a knife or the tip of a spoon, make small cuts of no more than half a centimeter long to cover the rectangle, imagine that you have made a whole plane of small vertical lines.
Take out the refrigeration roll, varnish with egg and cover with the puff pastry rectangle that you cut in the previous step. When placing the puff pastry decoration, you will notice that the cuts become a simple but pleasing pattern to the eye. Varnish again with egg and refrigerate 10 more minutes.
Bake for 35 to 40 minutes at 200 ° C. Remove from the oven, cut and serve with a salad.


Accompany with salad.


The puff pastry is made with butter, so when handling it you should do it as quickly as possible, otherwise the consistency will not be the same.
