Preparation
In a hot comal roast the onion along with the garlic until they have a dark color, stirring constantly so that all the sides cook evenly. Remove from heat. Blend together with the hydrated guajillo chili, the oregano, the water and the Knorr® Tomato cube until completely integrated.
Pour the smoothie into a pot with hot olive oil, cook over medium low heat for 8 minutes. Remove from heat and keep warm until use.
In a bowl place the sweet potato in cubes, with the help of a potato masher, press until obtaining a puree; add the pumpkin, carrot, onion powder, garlic powder, cumin, cornstarch, cuaresmeño pepper, egg, ground oats and coriander, mix and integrate until obtaining a manipulable consistency
Take a little of the mixture and with the help of your hands, form a small sphere, then squash until you form a pancake half a centimeter thick. In a hot skillet with olive oil, cook the pancakes on both sides over medium low heat. Drain on absorbent paper.
Serve the pancakes bathed with tomato sauce, accompany with Cotija cheese and decorate with coriander leaves.
