Preparation
In a casserole with a little oil (4 or 5 tablespoons), sauté the salted rabbit.
Add an onion, leek, pepper and carrots, all well chopped (in brounoisse, minced in small squares).
We stir the sofrito with the rabbit, add a teaspoon of sweet paprika and add the lentils.
Cover the lentils with water, add a little salt and let cook for 50 minutes.
If the lentils are dry, we can add a little cold water during cooking.
Let stand 5 minutes before serving.
We serve hot lentils along with the rabbit, being a unique dish.
