Chicken with Fruit and Olives

A very rich chicken recipe with a dehydrated fruit sauce and green olives.

Ingredients

6 portions
  • 6 Chicken pieces, thigh and leg
  • 1/4 cups red vinegar
  • 3 tablespoons olive oil
  • 1/2 tablespoons salt
  • 1/4 tablespoons black pepper
  • 4 cloves garlic
  • 1/2 cups seedless prune
  • 1/2 cups dried apricot, boneless
  • 1/2 cups pitted olive, boneless
  • 1 cup white wine
  • 1/2 cups fresh parsley, chopped

Preparation

In a deep bowl mix vinegar, olive oil, salt, pepper, and garlic. Add the fruits, olives and chicken, cover and marina in refrigeration for at least 5 hours or preferably overnight.
Preheats the oven to 220 degrees Celsius. Pour the white wine over the chicken and allow it to marinate at room temperature for 15 minutes.
Place the chicken in a rectangular baking dish and bake for 35 minutes or until the chicken is well cooked. Remove from the oven and allow to cool for 10 minutes.
Add the parsley, cover and refrigerate for at least 2 hours.
Remove from the refrigerator and remove the chicken from the bones (pull the bones). Mix the chicken with the fruit mixture and let sit for 10 minutes.
Serve cold

PRESENTATION

The chicken is served cold decorating the dish with the fruit sauce and olives.
