These empanadas are delicious to share with the family, as it is a light option for dinner. Chicken poblano pie recipe.

Ingredients

4 portions
  • 3 tablespoons mayonnaise
  • 2 cups chicken breast, shredded prepared with Knorr My Baked Chicken
  • 4 tablespoons corn kernels
  • 1.2 kilos Poblano pepper Strips (Rajas), roasted and skinless
  • 8 discs for empanada
  • 1 egg yolk, whipped with 1 tablespoon of milk
  • 1 tablespoon milk, to beat the yolks

Preparation

In a bowl mix the shredded chicken with mayonnaise, corn kernels and poblano.
Place a little of the filling in the center of the pie plate.
Close pressing the edges with a fork.
Coat the top part with the egg and bake for 15 min. at 180 ° C, they have to look golden.
Serve well warm, is a light option for dinner.
