Delicious, light and healthy, this is this green chicken mixiote, so easy and quick to prepare that it is craving for any day of the week. This is a family recipe that I love.

Ingredients

4 portions
  • 2 green zucchini
  • 2 nopales
  • 1/2 onions
  • fresh coriander, to taste
  • serrano chiles, to taste
  • 1 chicken breast, starting at 4
  • 3 green tomatoes
  • fresh epazote, to taste
  • salt, and pepper to taste

Preparation

Cut the pumpkins, nopales, tomatoes and onion into small squares.
Finely chop the coriander, parsley, epazote and serrano pepper.
Mix everything in a bowl and season with salt.
Put the mixture of vegetables and the piece of chicken on a sheet of paper for mixiote or in a square of aluminum foil.
Close the sheet or the aluminum foil with a cord avoiding any open place.
Fill the pressure cooker to 1/4 of its capacity with water, put a rack to steam cook or some dish that prevents the mixiotes from coming into contact with the water.
Place the mixiotes in the express pot, and cook them for 45 minutes.

PRESENTATION

Accompany the mixiotes with red rice and warm tortillas.

TIPS

If the mixiotes are cooked in a normal pot, they should be left to cook for 1 hour and 15 minutes.
