Preparation
Place half of the lemon and half of an onion inside the chicken cavity. Squeeze the rest of the lemon inside the chicken cavity.
Stir in the oil, garlic, thyme and paprika. Separate this oil in three, with a part of it rubs the cavity with this mixture. With your hands, separate the skin from the breast of the meat. Varnish the meat with a part of the oil mixture.
Tie chicken legs with string to bridle.
Place the chicken on a tray, with the breast facing up. Pour the remaining oil over the chicken. Sprinkle it.
Bake at 230 ° C for 30 minutes. Reduce the heat to 200 ° C and cook for 60 more minutes.
Once cooked, remove from the oven. Pour the cooking juices into a pan. Cover the chicken with aluminum foil and let it rest for 10 minutes.
To the pan with the juice of the cooking add the white wine, beat and incorporate little by little the flour. Cook for 5 minutes or until the sauce thickens.
