Classic Red Wine Chicken

Try this rich chicken with red wine or "Coq au vin", a classic of French gastronomy, made with carrots, chambray potatoes and a red wine-based sauce. This is a sophisticated and delicious recipe, but very simple to elaborate.

Ingredients

  • 2 spoonfuls of Butter
  • 1 tablespoon of olive oil
  • 3 pieces of chicken thigh with skin
  • 3 pieces of chicken leg with skin
  • 1 Cup of bacon finely chopped
  • 1/2 piece of onion cut into pieces
  • 2 spoonfuls of echallot diced
  • 1 Cup of papa cambray cut in half
  • 3 pieces of carrot cut into slices
  • 2 spoonfuls of cornstarch
  • 2 cups of Red wine
  • 1 Cup of chicken soup
  • 3/4 of Cup of Tomato puree
  • 1 teaspoonful of thyme powdered
  • 2 leaves of laurel
  • 1 tablespoon of parsley
  • to taste of salt and pepper
  • 1 Cup of mushroom cut in sheets

    Preparation

    In a pan, melt the butter, add the oil and seal the previously salted chicken pieces. Reservation.
    In a pan fry the bacon , add the onion, shallot, potatoes, carrots, chicken pieces and cornstarch.
    Pour the red wine and let reduce by half. Add chicken broth, tomato puree, thyme, bay leaf, parsley, season with salt and pepper, let cook for 30 minutes or until the chicken is fully cooked.
    Add the mushrooms and cook for 10 more minutes.
    Serve in an extended dish and accompany with pasta.

    PRESENTATION

    Serve one leg and one thigh per serving, accompanied by pasta or rice.

    TIPS

    In addition to browning the skin of the chicken very well, it is necessary to occupy a good quality wine, as this will give it a very special taste. You can use the wine that was left over.
