Classic Red Wine Chicken

Try this rich chicken with red wine or "Coq au vin", a classic of French gastronomy, made with carrots, chambray potatoes and a red wine-based sauce. This is a sophisticated and delicious recipe, but very simple to elaborate.

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 3 chicken thighs, with skin
  • 3 chicken legs, with skin
  • 1 cup bacon, finely chopped
  • 1/2 onions, cut into pieces
  • 2 tablespoons shallot, diced
  • 1 cup cambray potato, cut in half
  • 3 carrots, cut into slices
  • 2 tablespoons cornstarch
  • 2 cups Red wine
  • 1 cup chicken soup
  • 3/4 cups mashed tomatoes
  • 1 teaspoon thyme, powdered
  • 2 leaves bay (laurel)
  • 1 tablespoon parsley
  • to taste salt and pepper
  • 1 cup mushroom, cut in sheets


In a pan, melt the butter, add the oil and seal the previously salted chicken pieces. Reserve.
In a pan fry the bacon, add the onion, shallot, potatoes, carrots, chicken pieces and cornstarch.
Pour the red wine and let reduce by half. Add chicken broth, tomato puree, thyme, bay leaf, parsley, season with salt and pepper, cook for 30 minutes or until the chicken is fully cooked.
Add the mushrooms and cook for 10 more minutes.
Serve in an extended dish and serve with pasta.


Serve one leg and one thigh per portion, include pasta or rice.


In addition to browning the skin of the chicken very well, it is necessary to occupy a good quality wine, as this will give it a very special taste. You can use the wine that was left over.
