Preparation
In a pan, melt the butter, add the oil and seal the previously salted chicken pieces. Reserve.
In a pan fry the bacon, add the onion, shallot, potatoes, carrots, chicken pieces and cornstarch.
Pour the red wine and let reduce by half. Add chicken broth, tomato puree, thyme, bay leaf, parsley, season with salt and pepper, cook for 30 minutes or until the chicken is fully cooked.
Add the mushrooms and cook for 10 more minutes.
Serve in an extended dish and serve with pasta.
