Preparation
In a large pot with high heat, seal the meat in the vegetable oil until it turns golden brown.
Remove the meat from the pot and leave 2 tablespoons of oil in it.
Add the onion and garlic, season with salt and pepper, and cook until the onion has settled.
Add the cumin and then the chicken broth.
Finally, return the meat to the pot.
Cook over low heat for 30 minutes.
Add poblano peppers, jalapeños and primientos.
Blend the tomatoes and cilantro and pour over the stew.
Cook on low heat for 30 to 45 minutes more.
Once ready add the pork to the corn tortillas, and enjoy your delicious tacos.
