Ingredients

10 portions
  • 1 kilo black bean
  • 1 kilo pork tenderloin, in pieces
  • 1/2 kilos pork rib
  • 2 branches epazote
  • 1 white onion, minced
  • 1 tablespoon lard
  • 1 kilo tomtato, peeled and chopped
  • 10 radishes, finely chopped
  • 3/4 cups fresh coriander, chopped
  • 1 onion, finely chopped
  • 3 lemons, matches in four

Preparation

The beans are cleaned very well, washed and put to the fire in enough water and in a covered pot.
When it starts to boil, lower the heat to simmer for an hour. The pig is salted. When the beans are half cooked, add a tablespoon of salt and the epazote.
The onion is fried with the lard until it is dark brown, the tomato is added and it is half sauteed, and it is added to the beans along with the meat, leaving to cook until the meat is very soft.
The bean with pork is served with rice, radishes, cilantro and chopped onions, and a cup with bean broth to which will also be added cilantro and chopped onions and chilitomate to taste.
