Carnitas in Green Sauce

  • 1/2 oranges, for the carnitas
  • 1 cup evaporated milk, for the carnitas
  • 1 cup orange juice, for the carnitas
  • 1 cup aromatic herbs, for the carnitas
  • 1/2 heads garlic, for the carnitas
  • to taste sea salt, for the carnitas
  • 1 tablespoon lard, for the sauce
  • 8 tomatoes, cut in quarters for the sauce
  • 1/4 onions, for the sauce
  • 5 serrano peppers, for the sauce
  • 1 clove garlic, for the sauce
  • 1 teaspoon cumin powder, for the sauce
  • 1 cup chicken soup, for the carnitas
  • 1 branch fresh coriander, for the sauce
  • enough onion, finely chopped
  • enough fresh coriander, to decorate
  • enough corn tortilla, To accompany


For the sauce, heat the butter in a pan, fry the tomatoes, the onion, the serrano pepper, the garlic and cook until the tomatoes change color. Then add the chicken stock and the cilantro, cook for 5 more minutes, remove from heat and cool slightly. Blend and reserve.
For the carnitas, heat the butter in a casserole, then add the meat, the orange, the evaporated milk, the orange juice, the herbs, the garlic head and the grain salt. Cook over medium heat for 90 minutes or, until the liquid has been consumed.
Fry the meat lightly until golden brown, drain the excess fat, pour the green sauce and cook 15 more minutes; Season if necessary.
Serve very hot and accompany with finely chopped onion and coriander leaves.

Evaporated milk gives the meat softness, in addition to a delicious creamy flavor. If the tomato sauce is acidic, correct it by adding a teaspoon of baking soda to neutralize the acidity.
