Preparing a pork tenderloin is easier than you thought if you follow the step by step of this recipe. Accompanied by a delicious pineapple sauce, which can also be peach or orange, this tenderloin is a perfect dish for special occasions, or even for Christmas dinners, but it is also ideal for any day of the week in which you want to consent to all your family.

Ingredients

4 portions
  • 1 kilo pork tenderloin in cane Amara
  • 1 cup Pineapple marmalade
  • 1 cup orange juice
  • 1 whole clove
  • 2 bay (laurel), (leaves)
  • 4 tablespoons vegetable oil
  • enough raisin
  • enough pinion

Preparation

For the sauce, mix the marmalade with the orange juice, bay leaves, cloves and add salt to taste. Reservation.
Season with salt and pepper and then tie the loin with hemp thread making a knot at the beginning to prevent it from falling, cross the thread between each turn and end with another knot.
Heat the vegetable oil and brown the tenderloin on all sides.
Remove from the pan and place in a refractory with raisins and pine nuts.
Pour the sauce over the loin and bake for 30 minutes at 180 ° C, or until the meat is well cooked.
Bathe with the sauce every 10 minutes so that it does not dry out. Serve in thick slices.

TIPS

To check that the tenderloin is cooked, chop with a knife, if the juice of the meat is still reddish, bake until it comes out semi transparent. Pork is ideal for bittersweet combinations, so you can substitute pineapple jam for peach or orange.
