Ingredients

8 portions
  • 1 1/4 kilos pork tenderloin
  • 3 Red apples
  • 1 cup prune, Seedless
  • 1 cup Apple cider
  • 1 cup chicken soup
  • 1 tablespoon cornstarch
  • 2 green apples
  • 1 tablespoon cinnamon powder
  • 1 bunch parsley
  • sugar, to taste
  • oils, amount needed
  • pending, to taste
  • black pepper, to taste
  • white breads, optional

Preparation

Chop the red apples in squares and place them in a bowl. Once you have cut them, place them in the pan with a little oil. Leave for a few minutes.
Meanwhile, cut the prunes in half and add to the pan of the apples, add salt, cinnamon powder and pepper to highlight the flavors mix everything well and place a little sugar, then cut the parsley and put a little finely chopped. Let it cook.
Cut a thin layer about 1 cm thick on the back without reaching the end, then open and cut so that there is a sachet, without breaking any of the ends
When the filling is at the desired point, transfer to the sachet of the meat and close so that you do not see the mixture, this with the help of a string we roll it and place it in the previously greased baking dish, remember to season with salt and pepper. Bring to bake at 200 ° C for about 40 minutes to an hour.
For the sauce: Cut the green apples into segments and add to the pan, add salt and pepper to taste, also add more cinnamon powder and about 4 tablespoons of sugar. Also incorporate chicken broth, corn starch dissolved in apple cider to thicken us well. Leave until it reaches a boil and reserve.
Remove the well-baked pork loin from the oven and remove the string, cut into slices and serve with the apple sauce.

PRESENTATION

You can decorate the loin with a little parsley, it would give a touch of color, flavor and presentation

TIPS

You can replace the apple cider with some wine.
