Ingredients

6 servings
  • 2 cups of flour for the crepes
  • 3 pieces of egg for the crepes
  • 1 tablespoon of sugar for the crepes
  • 1/2 teaspoonful of Salt for the crepes
  • 1/4 of teaspoonful of black pepper for the crepes
  • 4 spoonfuls of Butter melted, for the crepes
  • 2 cups of milk for the crepes
  • 1 Cup of tomato sauce for the sauce
  • 1/4 of Cup of Chile chipotle milled for the sauce
  • 1/2 teaspoonful of oregano for the sauce
  • 20 slices of Ham
  • 20 slices of Manchego cheese
  • 1 Cup of Pineapple in syrup cut into cubes
  • enough of fresh oregano to decorate

    Preparation

    Preheat the oven to 180 °C. ( 356°F)
    Blend the flour with the egg, sugar, salt, pepper, butter and milk until you get a homogeneous and semi-liquid mixture.
    In a Teflon pan over low heat, pour a ladle of the previous preparation, spread over the entire surface of the pan and cook for 2 to 3 minutes on both sides or until the crepe is cooked.
    Mix the tomato puree with the chipotle pepper and the oregano. Reservation.
    In oven-proof dish, previously greased, place a bed of crepes, the tomato sauce, slices of ham, cheese, pineapple and repeat the procedure until filling the oven proof dish, sprinkle with cheese.
    Bake for 15 minutes or until the cheese is au gratin.
    Garnish with fresh oregano, cut a slice and serve with a fresh salad.

    TIPS

    Remember that the mixture of crepes should be a little liquid, to have a thin crepe, if it's too heavy, the crepe will be very thick.
