Ingredients

6 portions
  • 2 cups flour, for the crepes
  • 3 eggs, for the crepes
  • 1 tablespoon sugar, for the crepes
  • 1/2 teaspoons salt, for the crepes
  • 1/4 teaspoons black pepper, for the crepes
  • 4 tablespoons butter, melted, for the crepes
  • 2 cups milk, for the crepes
  • 1 cup tomato sauce, for the sauce
  • 1/4 cups Chile chipotle milled, for the sauce
  • 1/2 teaspoons oregano, for the sauce
  • 20 slices Ham
  • 20 slices manchego cheese
  • 1 cup Pineapple in syrup, cut into cubes
  • enough fresh oregano, to decorate

Preparation

Preheat the oven to 180 °C. ( 356°F)
Blend the flour with the egg, sugar, salt, pepper, butter and milk until you get a homogeneous and semi-liquid mixture.
In a Teflon pan over low heat, pour a ladle of the previous preparation, spread over the entire surface of the pan and cook for 2 to 3 minutes on both sides or until the crepe is cooked.
Mix the tomato puree with the chipotle pepper and the oregano. Reservation.
In oven-proof dish, previously greased, place a bed of crepes, the tomato sauce, slices of ham, cheese, pineapple and repeat the procedure until filling the oven proof dish, sprinkle with cheese.
Bake for 15 minutes or until the cheese is au gratin.
Garnish with fresh oregano, cut a slice and serve with a fresh salad.

TIPS

Remember that the mixture of crepes should be a little liquid, to have a thin crepe, if it's too heavy, the crepe will be very thick.
