This delicious pasta recipe with morels and mushrooms in a creamy sauce is very easy to prepare. For a gourmet touch, use truffle salt.

Ingredients

6 portions
  • 1 kilo short pasta, as a penne
  • 3 tablespoons olive oil
  • 1 red onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 1/2 kilos mushroom, sliced
  • 1/2 cups white wine
  • 1 1/2 liters cream
  • 500 grams parmesan cheese, grated
  • 1/2 cups chives, finely chopped
  • to taste black pepper, to taste

Preparation

The pasta is cooked according to the package instructions with salt water. 1 cup of water is reserved.
In a pot, put the olive oil and fry the onion and garlic.
Mushrooms and morels are added and the pot is covered. Cook for about five minutes and season with salt and pepper. Uncover and let them cook for another 10 minutes to release their liquid.
Add the white wine and leave for another 5 minutes until it reduces a little.
Finally add the cream (of the beat) and let it thicken for a few minutes over low heat.
If the sauce is reduced too much add a few tablespoons of the liquid in which the pasta was cooked and season with salt and pepper.
Return the pasta (already drained and dry) to the pot with the creamy sauce and stir well.
Add Parmesan cheese and chives. It is stirred and served.

TIPS

If you have truffle salt, add it instead of the normal salt!
