Ingredients

6 portions
  • enough Water, to boil the pasta
  • 1 tablespoon salt
  • 500 grams spaghetti
  • 1/4 onions
  • 1 clove garlic
  • 4 poblano peppers
  • 1/3 cups yellow corn
  • 1 cup cream cheese
  • 1 cup evaporated milk
  • 1/2 cups chicken soup
  • to taste salt
  • to taste black pepper
  • 2 tablespoons butter
  • enough poblano pepper, in thin strips, to decorate
  • enough yellow corn, in grains, to decorate
  • enough panela cheese, diced, for garnish
  • enough parmesan cheese, To accompany
  • enough bread, To accompany

Preparation

In a pot, bring the water to a boil and when it boils add the salt, wait for it to regain temperature and add the pasta and cook for 12 minutes. Drain, cool and reserve.
In a comal over medium heat, roast the poblano peppers for 15 minutes until they are burned; Remove from the griddle and place them in a plastic bag, reserve for 10 minutes until they sweat, peel and clean the chiles with the help of a knife.
Blend the roasted poblano peppers, corn, cream cheese, garlic, onion, evaporated milk, chicken broth, salt, and pepper. Add to a pot with butter and cook for 10 minutes, pour in the pasta and incorporate with the sauce.
Serve and decorate with the poblano chili, the corn, and the panela cheese, accompany with Parmesan cheese and bread.
