Preparation
Cook the ball tomatoes in a pot with boiling water.
Once cooked, add them to the blender along with the quartered white onion and garlic clove.
Strain the mixture over a pot over the fire, boil until the tomato changes its color to a darker one. Season with the fine herbs and oregano.
Cut the sausages into 4 equal pieces.
Insert 6 sticks of spaghetti into each piece of sausage, the sausage should be in the center, be careful not to break the spaghetti.
Cook according to package directions, about 10 minutes.
Place in a deep plate, pour a little of the sauce on top and sprinkle with the Cotija cheese.
