The escarole salad is one of my favorite recipes, always prepared when I want something fresh, healthy, fast and very rich. I recommend preparing it for a delicious barbecue or to accompany a pizza.

Ingredients

4 portions
  • 1 teaspoon Dijon mustard
  • 1 teaspoon red wine vinegar
  • 2 teaspoons oil, of nuts
  • salt, to taste
  • whole black peppers, to taste
  • 400 grams escarole lettuce
  • 2 pears
  • 250 grams gorgonzola cheese
  • 150 grams walnut, chopped

Preparation

Toast the nuts in a pan WITHOUT oil. (Set aside)
Mix well the mustard with the red wine vinegar and the walnut oil, salt and pepper.
Wash and disinfect the escarole, drain and cut.
Wash the pears, peel and cut (in cubes).
Cut the gorgonzola cheese as you like, preferably in strips. Mix well.

PRESENTATION

Put with a few pieces of bread of herbs or bread with garlic.

TIPS

Make a little more dressing so everything is very well soaked.
