This salad is perfect to keep the line, it has serrano ham (or prosciutto), fresh mozzarella cheese, melon, and a very good mint dressing.

Ingredients

4 portions
  • 1 cantaloupe
  • 170 grams fresh mozzarella cheese, (ideally in balls)
  • 6 slices Serrano ham, in thick slices
  • 2 tablespoons vinegar
  • 6 tablespoons olive oil
  • 1 teaspoon powdered sugar
  • 1 teaspoon Dijon mustard
  • 2 tablespoons peppermint, finely chopped
  • to taste black pepper, to taste
  • arugula, or spinach

Preparation

Cut the melon into squares or into balls (with a special spoon to make the balls).
Cut the mozzarella in cubes (or if it is already in balls cut in half).
Prepare the dressing: mix the vinegar, oil, sugar, mustard and mint. Add salt and pepper to taste.
Place on each plate balls of melon, balls of mozarella and a slice of prosciutto cut into 3 (fit nice on the plate).
Put a little dressing on each plate and serve.
