Ingredients

8 portions
  • 1 jicama
  • 1 cucumber
  • 2 carrots
  • 1 cup pineapple
  • 1 cup tangerine juice, for the vinaigrette
  • 3/4 cups olive oil, for the vinaigrette
  • 1/4 cups white vinegar, for the vinaigrette
  • 1/2 cups sesame seed, caramelized for vinaigrette
  • enough green chile, to decorate

Preparation

Cut the jicama, cucumber and carrot into strips; Peel and cut the pineapple into cubes and mix everything in a bowl. Reservation.
For the tangerine vinaigrette, blend the tangerine juice, olive oil, vinegar, sesame. Reservation.
Serve the salad with the vinaigrette.

PRESENTATION

Garnish with finely chopped green chili and caramelized sesame seeds.

TIPS

If you want to intensify the flavor of the vinaigrette, add salt and pepper.
