Ingredients: 2 liters water; 1 tablespoon salt; 1 package elbow pasta La Moderna®, vegetable pasta 200 g; 1 cup olive oil, for the vinaigrette; 1/3 cups white vinegar, for the vinaigrette; 2 tablespoons apricot jam, for the vinaigrette; 2 tablespoons orange juice, for the vinaigrette; 1 teaspoon salt, for the vinaigrette; 1/2 teaspoons pepper, for the vinaigrette; 4 bell peppers, in strips; 1 cup heart of palm, sliced; 1 cucumber, in cubes

In a small pot with boiling water and salt, cook La Moderna® coconut pasta until al dente. Drain and cool. In a bowl, mix all the vinaigrette ingredients and divide into four glass jars with lids.
