Healthy salad endowed with the freshness of mint based on pinto beans accompanied by quinoa, kale leaves, cucumber, with a touch of lemon citrus and a delicious sweet taste of dried cranberry and delicious combination of walnut. This sweet and sour salad is delicious, try it.

Ingredients

6 portions
  • 1 cup quinoa, cooked
  • 1 cup pinto bean, Cooked
  • 1 cup kale, cut into small pieces
  • 1 orange, cut into supreme
  • 1 cup dried cranberry
  • 1/2 cups walnut, toasted and chopped
  • 1 cucumber, sliced
  • 1/2 cups peppermint, just the leaves
  • 1/2 cups olive oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1/4 cups lime juice

Preparation

In a bowl mix the quinoa with the pinto beans, the kale, the orange supreme, the walnut, the cucumber rolls, the mint leaves, the olive oil, season to your liking with the salt, pepper and juice of lemon.
Serve and enjoy.

PRESENTATION

Serve the salad in a bowl with a few drops of olive oil and mint leaves to decorate.

TIPS

To make the cucumber slices, cut the slices with a peeler, so they will be thin and perfect so that you can roll them up.
