This salad is a very complete dish since it has rice, cheese, olives, artichoke hearts, anchovies and olive oil. It is a great source of iron and vitamins because of its ingredients. A simple and easy option to make a healthy eating dish.

Ingredients

4 portions
  • 250 grams White rice, Cooked
  • 3 tomatoes, chopped
  • 1 cup manchego cheese, grated
  • 40 grams olive
  • 1 tablespoon capers
  • 2 artichoke hearts
  • 20 grams anchovy
  • 1/2 cups olive oil
  • 4 tablespoons seasoning, liquid
  • 1 lemon

Preparation

In a bowl mix the previously cooked rice, the chopped tomatoes and the grated Manchego cheese.
Add the olives, capers and artichoke hearts and mix well.
In a bamboo bowl prepare the vinaigrette adding anchovy fillets, half a cup of olive oil and the liquid seasoning.
If you wish you can add the juice of a lemon to the vinaigrette, which gives it a special touch.
Offer the vinaigrette to pour over the rice with cheese.

PRESENTATION

Place in a salad bowl and put it in the center of the table.
