Preparation
To begin with, you should disinfect the kale with the method of your choice.
Now cut the stems of each of the kale leaves, then start cutting into strips (Roll several cabbage leaves and start chopping them into thick strips)
In a large bowl add the cabbage, the juice of half a lemon, a little olive oil and with your hands stir the salad until the cabbage is softened. Reserve.
In a small bowl, stir what is left of the lemon juice with honey and enough ground pepper, add 1/4 cup of olive oil and continue stirring until it has the consistency of a dressing and you like the flavor, you can add salt .
Pour the Salad over the Cabbage Salad and as a final touch add the Mango and the Pepitas, stir and serve in 4 individual plates.
