Preparation
Put the saffron in the boiling chicken broth and turn off. Wash and dry the chicken well and season with salt and pepper.
Brown in the olive oil and put it on a plate. Add the onion and citrus. Add the garlic, paprika and pepper.
Add the rice, wine, broth, bay leaf, peas and olives. Cook in low heat to dry, put chopped parsley on top.
