Tomatoes Stuffed with Tofu

Healthy and delicious tomatoes stuffed with tofu can be served as a starter or as a garnish.

Ingredients

6 portions
  • 6 tomatoes, medium and round
  • 1 clove garlic
  • 2 tablespoons white miso paste
  • to taste parsley, or dry basil
  • 1 tablespoon olive oil
  • 4 tablespoons Water
  • 3 tablespoons parmesan cheese
  • 200 grams tofu

Preparation

Empty the tomatoes and arrange in a baking dish.
Grind the rest of the ingredients in a mortar until they are perfectly incorporated. If you wish you can use a food processor and chop the mixture finely.
Fill the tomatoes and sprinkle 1/2 tablespoon of Parmesan cheese for each of the tomatoes.
Bake on medium heat for 20 minutes.

PRESENTATION

Use as a garnish or as an entrance.

TIPS

To reduce the number of calories, you may not use Parmesan cheese and being out of the oven serve with a teaspoon of cottage cheese in each tomato.
