Pumpkins Stuffed with Chicken in Red Sauce

Ingredients

6 portions
  • 6 pumpkins, criolla
  • 1 tablespoon olive oil
  • 1/4 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 3 cups chicken, in small cubes
  • 1 cup rajas poblanas
  • 1/3 cups Corn kernels La Costeña®
  • 1 cup tomtato, in cubes
  • 1/3 cups mashed tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1/4 cups ground bread
  • 1 cup manchego cheese
  • 1 Mexican homemade salsa La Costeña®, (475 g)

Preparation

Preheat the oven to 180 ° C (356F)
On a table and with a knife cut off the top of the pumpkins and scoop out with a spoon. Reserve the stuffing.
In a pan, sauté the onion and garlic with the olive oil, add the chicken and season with salt and pepper, cook until browned.
Add poblano chile, corn kernels La Costeña®, pumpkin filling, tomato and mashed potatoes, cook 5 minutes more. Season with cumin, oregano, salt and pepper to your liking.
Fill the pumpkins with the previous preparation, cover with bread crumbs and Manchego cheese. Place on a baking tray and bake for about 15 minutes or until the cheese is gratinated and the pumpkins are softened.
In a saucepan over medium heat, heat the homemade La Costeña® Mexican sauce until it boils. Reservation.
Serve a little sauce in a bowl as a mirror and place a pumpkin on top.

PRESENTATION

Garnish with fresh oregano.

TIPS

Add a little butter before stuffing the pumpkins, it will give more flavor at the time of baking.
