Preparation
Put the olive oil in a saucepan and sauté the onion, echallot, carrot, celery and shrimp shells. Leave it like 15 minutes, moving occasionally. Add the tomato and pepper and let season. Add the clam juice, 2 cups of water, sherry and tarragon. Cover and let the vegetables are soft. Spice with salt and pepper. Add more water if necessary.
Pass the shrimp shells to the blender with a little of the broth and liquefy. Strain them, squeezing as much as possible, transfer this stock to a saucepan.
Pass the vegetables to the blender and grind little by little. Pass through a sieve and squeeze out all the vegetables. Put back in the pan.
In a little olive oil, sauté the shrimp. Put the lemon juice and add it to the soup. Add the cream and cayenne pepper and rectify the salt and pepper.
