Preparation
In a large pot brown the onion in the olive oil for 4 minutes.
Add the ginger, nutmeg, pepper and dora for 1 minute more.
In a food processor, process the carrots to obtain a puree. Add the puree to the onion, ginger and brown for 1 minute.
Add the chicken stock and cook for 30 minutes over low heat or until the carrot is very well cooked.
Remove from heat and serve.
