Carrot Soup with Ginger

A rich soup based on carrots, onions and ginger. This soup is very healthy and ideal to warm a cold day. Also, it will not take much time to prepare it. So you can pamper everyone at home.

Ingredients

6 portions
  • 2 onions, chopped
  • 3 tablespoons ginger, chopped
  • 3 tablespoons olive oil
  • 20 carrots
  • 2 tablespoons ground pepper
  • 1 tablespoon nutmeg
  • 6 cups chicken soup, natural or can

Preparation

In a large pot brown the onion in the olive oil for 4 minutes.
Add the ginger, nutmeg, pepper and dora for 1 minute more.
In a food processor, process the carrots to obtain a puree. Add the puree to the onion, ginger and brown for 1 minute.
Add the chicken stock and cook for 30 minutes over low heat or until the carrot is very well cooked.
Remove from heat and serve.

PRESENTATION

You can serve the soup with a teaspoon of sour cream and some coriander leaves.

Complementos Se le agregan un poco de leche sale cremosa y es muy rica. Ademas se puede acompañar de trocitos de pan previamente tostados u horneados.
