Preparation
Put the beef cut in pieces and a little salt in a pressure cooker in a sufficient amount of water. Once the wide and guajillo chiles are completely cooked, they are roasted and boiled in a little water.
The potatoes cut into cubes are cooked separately.
The boiled chiles are grinded with the roasted tomato with the garlic, pepper, cumin and cloves, once ground they are strained and put to fry in a saucepan, moving constantly until the mixture becomes sauce and has been reduced.
Add the beef stock to the previous sauce and boil. In case you want more broth add hot water.
Cut the onion into julienne and fry until transparent.
The noodles are fried in a pan until they are lightly browned, and drain very well.
Add the noodles to the broth and add the cooked beef, leave to boil until well cooked. Add the onion.
Add the cut and cooked potatoes and in the last boil the coriander branch is put.
Once the soup is ready, cover and let stand until serving.
